Baking is Fantastic


We recently threw a surprise 10th anniversary party for some close friends and of course I was so excited about the whole thing....first planning parties or anything for that matter is so fun. It involves notes, lists, and lots of post-it's then it's right up my alley. As much as I love to buy already made things because let's face it, it saves like a hundred steps....I love to bake. So here was my big chance to try once again my hand at baking.... Our friends happened to be big coconut fans and so I really wanted to try to make this martha stewart recipe of a delicious not to difficult coconut cake with white frosting...

Okay fine I'll tell you all what happened. The cake was beautiful the frosting was a complete disaster...a least it was a night time party so maybe we could hide the cake in the background was all i was thinking. Martha Stewart says this is so simple, easy frosting but it was NOT...it was watery, tasty, but clearly not eatable. So I kept adding things to thicken it up and so it turned to a very interesting color from the vanilla...anyways I guess the point is I have two things to say
FIRST: Martha Stewart Lies
and
SECOND: The cake was still delicious and baking is of course fabulous.

The Pros and Cons of Growing Up


Yesterday at work I overheard a conversation a man was having with his aged mother. It was by no means funny, but I couldn't help but giggle as I tried to look busy on the computer. Everyone has the same problems. No matter where you go or who you meet it all comes down to the same issues. And that's what made that situation so funny, it's that just when you feel like "who in the world would understand what I'm going through?" You realize just about half the population would and does. The things that get us down, or make me not want to leave my huge comfy chair, are the things that people isolate themselves over. I'm still praying for patience...in the mean time I take a the little smiles I can.

Doctors Visit Has Arrived

So finally our doctors visit has arrived...it seems like we had been waiting forever (really it was only 3 weeks). We had previously found out that I have a rare blood clotting disorder, Antiphospholipid Syndrome, APS. There are a lot of different names used for this but APS is short and easy to say. Anyways all my worries were put to rest when talking with the specialist and doctor. There are a lot more people that suffer from these kind of disorders than I ever would have imagined. They really offered a lot of encouraging options and we came away feeling very optmistic. Although I now have to take a baby asprin everyday because I am at a high risk for blood clots. This concerned me because I didn't want to end up bleeding excessively if I got a minor cut and also I was worried about the bruising that often seems to go along with taking it daily. But thus far, 4 days out, no excessive bleeding if cut and no bruises, we'll see though. I feel thankful that my doctor sent me to get this blood test because most women won't be sent for testing until they suffer two or three miscarriages. I keep thinking that all this time I've had this condition and I'd been flying long distances, sitting for long periods of time on roadtrips, and taking bcp. All these increase your risk for blood clots in addition to my high risk....scary, but thankful to know now :)

pizz a what?




So I'm sorry I haven't posted lately I've been completely frustrated with technology. I have created multiple vlogs none of which will load correctly on here. So I've decided to include the pictures and just carry on until our computer savy friend returns from a trip. Anyways what are these pictures and what is pizz-a-dilla you must be wondering? Well I'll tell you it's a delicious and wonderfully easy dinner that I love ;) Good thing Jonathan likes it too or he'd be in trouble. The pictures show you how to make it in reverse order, but you get the idea. If the video ever does load you will have a lovely tutorial on how to make this, much like the little hulu clips on cooking from the food network, hopefully. I love watching those. Okay back to pizz-a-dilla. You start with tortillas, 2 cans of diced tomatoes with chiles (rotella), your favorite cheese, fresh basil (mines from the garden), and that's it!!! So first put some olive oil in a small pan add the 2 cans of tomatoes with some minced garlic and season with salt and pepper. Just warm it up basicly. Then get your big pan out for cooking the actual finished product. Also add olive oil and the tortilla...next the cheese, then diced tomatoes, then shredded up basil (it smells so good :) Top it with another tortilla and keep flipping it over with a spatula until both sides are crisp and cooked...Slice and serve alone or with salsa and sour cream. This is a Rachael Ray recipe that I've motified with what we like...enjoy and let me know what you think! I could eat this everyday, okay maybe everyother day, but it's delicious. Why I love barbecuing...


Besides for the obvious reasons, like it's simply delicious, I love barbecuing because of so much more. It reminds me of home. That warm comforting feeling the goes straight in my nose and down to my stomach. I know home is a state of mind and the people you love and not the actual place, but from the first sniff of flame broiling I think of my parents, my brother and our cute little backyard. My mom getting the chicken or steaks together all seasoned and wonderful and sending my dad out to the grill. My mom preparing the salad and bread and me cleaning the table, setting it, and drolling over my dad's wonderful barbecue sense. He always knows just the right time to lift up the lid and flip over whatever was cooking. Even veggies seemed better on the grill. The table set then we'd all gather at the umbrella covered table on the patio. Enjoy the last bits of sun and each savory taste of dad's barbecue goodness :) My brother of course arriving just in time for food. He has a nose for these things. I miss that backyard with the water fountain my mom would have going in the background. So calming, so peaceful, and so making me have to pee after too many glasses of tea.
Barbecuing is different now, but still wonderful. It brings back wonderful memories, ones that I had forgotten since my husband and I haven't ever had our own grill. My parent's gift to us for our anniversary this year is what brought this all back. Our very own barbecue. Jonathan's been perfecting his technique based on tips from my dad. By the end of summer he'll be a pro too. Eating grilled food watching the setting sun is one of my favorite past times.

When we first moved here I decided I was going to make a coffee table book of Kentucky Barns, but of course I got distracted or busy or whatever. Anyhow, here are the pictures. I love them and there are so many more to capture. I love the bright green color that surrounds them most of the year. What do you think should I continue the project?

So I'm not sure how to start a blog so i'll just jump in the middle and let you guys piece it all together. This is going to be a combination vlog/blog, if i can ever get my intro video to load, but in the mean time I'll post pictures and things. We have now been living in Kentucky for 2years and 4 months. Which I can't believe and I wished I started this back when we first moved, but better late than never. I'll be updating you on our lives here in Kentucky, which is oh so different from California(oh let me count the ways....) Hopefully we will be doing cooking vlogs on here. My hope is that through this project I will be able to get support and help to cope with our recent miscarriage and keep busy while awaiting our specialist appointment. thank you for checking in ;)
